SILO Distillery’s Philogyny Brings New Taste, Crispness to Russet Apple Cider

Who runs the world? … We all know the answer, but SILO Distillery is adding another notch to its badass belt with the launch of Philogyny, the first generation of a new cider series that celebrates both deliciousness and inclusive community.

Philogyny #1 is a dry, fruit-forward cider that is perfectly fermented and slightly hazy from being unfiltered. It’s a pale gold with some rising bubbles. On the nose, sippers will notice a strong ripe apple scent mixed with honey, plus notes of citrus, pineapple, berry bramble and chamomile.

Its flavor profile starts sweet, just over acidic, with low bitterness thanks to its heirloom apples. Notes of dried apricot, honey, chamomile and citrus shine. There’s a mineral sense to it, and it’s refreshingly tart.

Philogyny is made from 100 percent russet apples — mostly the golden russet variety, with a few Roxbury russets included, too. They’re sourced from Gould Hill Farm in nearby Contoocook, New Hampshire, aligning with SILO’s mission to include locally grown and harvested ingredients in its portfolio of spirits.

SILO, a woman- and LGBTQ-owned distillery in Windsor, is known for its fearless approach to flavors and its social justice ethos. Owner Erin Bell strives for inclusivity and community through her products and events held at the bar.

“This cider is new, but the mission remains the same — we’re celebrating the incredible women, moms, spouses and masterminds who make SILO what it is,” Bell said. “Our ultimate goal is a product people want to drink, but our path to get there is where the fun and adventure lies for us.”

Philogyny will be available at the SILO Distillery, 3 Artisans Way in Windsor, Vermont, and throughout the state.
